Matcha yogurt traditional cake, super soft and wobbly, as cute as a corgi's wiggling hips.
Matcha yogurt traditional cake made with egg, yogurt and vegetable oil, baked until light, fluffy and golden. Easy to follow with simple step-by-step instructions.
Instructions
- 1

Separate the egg whites and yolks of 4 eggs in advance, and refrigerate the egg whites for later use.
- 2

Sift 30 grams of low-gluten flour, 8 grams of matcha powder, and 10 grams of cornstarch together into a bowl and set aside.
- 3

50 grams of vegetable oil, heated until it forms oil threads and starts to roll, around 70-80°C. (Scalding the flour prevents gluten from forming, making the cake softer)
- 4

Pour the heated vegetable oil into the flour and stir evenly until it becomes a paste.
- 5

4 egg yolks, mix evenly.
- 6

Add 100 grams of yogurt (preferably thick yogurt).
- 7

Stir evenly.
- 8

Sifting the batter once can make it smoother.
- 9

4 chilled egg whites and 5 grams of lemon juice, put them together and start whipping, whip until the foam forms large eye-shaped bubbles.
- 10

60 grams of fine granulated sugar, added in three parts while whipping—in the coarse foam, medium foam, and fine foam stages, add it while whipping.
- 11

Beat until lifting the beater forms small elastic peaks.
- 12

Take 1/3 of the egg white mixture and add it to the matcha egg yolk mixture.
- 13

Mix well.
- 14

Then pour it all back into the egg white mixture.
- 15

Mix well.
- 16

Line the mold with parchment paper in advance (note: wrap a layer of aluminum foil around the outside of a removable-bottom mold), pour the batter from a height, and shake the mold slightly to level the batter.
- 17

Tap the mold twice, then use chopsticks to draw a few circles in the batter; this can remove large bubbles.
- 18

Prepare a large deep baking pan, place the cake mold inside, pour half of cold water into the large baking pan, and then put it into the oven.
- 19

Preheat the oven to 150°C in advance and bake for 70 minutes (Note: After the cake surface has colored, cover the top with a sheet of aluminum foil, so the surface will not be too burnt).
- 20

After baking, tap it twice to release the heat inside the cake, then demold and let it cool.
- 21

Corgi electric hip yogurt old-fashioned cake, completed O(∩_∩)O
- 22

When you pull it apart, there is a faint ripping sound, which is very soothing.
- 23

The texture is fresher, and the cake is super soft.
- 24

After being refrigerated, it has a feeling similar to a light cheesecake when eaten.
