Meat skin aspic
A northern Chinese classic in which pork skin is simmered down into a firm, glassy jelly, sliced and served with a garlicky dip.
Instructions
- 1

Boil the pork skin briefly to remove excess fat inside, and the cleaner it is, the better.
- 2

Cut into thin strips.
- 3

Add water to shredded pork skin at a ratio of 1:2.5, bring to a boil, then simmer over medium heat for one hour. After cooking, put it into a bowl and refrigerate for half a day until it solidifies into blocks, then it's ready to eat.
- 4

Make a garlic sauce, which is just mashed garlic and soy sauce. It must be mashed garlic, and after mixing, it will have a slightly stringy effect.
- 5

Dip it in the sauce, it's awesome!
