Double-yolk eggs are oiled, salt-armored, and tucked away for two weeks until the whites turn salty jade and the yolks richly golden, perfect for congee.

Rinse with water.
- 3
Soak it in water for a day.
- 4

Pour the baijiu into a bowl and put the egg into the liquor.
- 8
Take it out and coat it with a layer of salt.

Put it in a plastic bag and seal the opening tightly. Place it in a cool, dry area to marinate for 15 days.
- 10
Put water in a pot and cook the marinated double-yolk eggs for 8 minutes. Let them cool slightly and then cut them open. You can put them in a sesame flatbread and carry them while walking in the park—a good way to stave off hunger.
