Method for Pickling Sour Plums
Pounded green plums are salted, washed, then split into batches, some steeped in cooled preserved-plum syrup so the sour fruit turns sweet-tart and intensely fragrant overnight.
Instructions
- 1

Wash the plums clean.
- 2

Use a knife to flatten it, applying an appropriate amount of force; do not hit too hard to crush it.
- 3

Add salt to the pitted plums.
- 4

Mix evenly and marinate for half an hour for later use.
- 5

Add rock sugar and preserved plum, cook until the white sugar dissolves, then take out and let it cool for later use.
- 6

Plums that have been marinated for half an hour should be washed clean with water.
- 7

Divide half out and add the cooled dried plum water.
- 8

Marinate for half an hour; it will be even more flavorful if left overnight.
- 9

Add a little salt, sugar, and chili powder to the remaining ingredients, and mix evenly.
- 10

Mix evenly, and you can eat it now if you can't wait. Marinating for half an hour makes it even more delicious.
