Milk-flavored Red Bean Roll
Soft milk-dough rolls swirled with honeyed sweet red beans, enriched with sugar and lard, fermented twice and steamed into fluffy spirals with a creamy, sweet bean filling.
Instructions
- 1

Prepare a bowl of sweet red beans.
- 2

Prepare the flour.
- 3

Stir the yeast into warm milk until well combined, and after leaving it at room temperature for 10 minutes, add the yeast milk, sugar, and 5 grams of lard to the flour, and mix into a coarse dough.
- 4

Knead into a smooth dough.
- 5

Put the dough into a large bowl, place it in a warm spot, and let it ferment until it doubles in size (now that the weather is hot, room temperature is fine).
- 6

The fermented dough is degassed and kneaded smooth again.
- 7

Roll into a long strip.
- 8

Divide into eight equal parts.
- 9

Separate and gather, cover with plastic wrap to prevent drying out.
- 10

Take a piece of dough.
- 11

Roll into a round dough piece that is thick in the center and thin at the edges, and wrap in sweet red beans.
- 12

Pinch the bottom.
- 13

Flip it over and roll it into an oval shape.
- 14

Roll up from one end.
- 15

One embryo is fine.
- 16

Complete all of them in order, place them in the steamer with some space between, cover with the lid, and let them rest for another 20 minutes.
- 17

Place the pot with cold water on the stove, bring to a boil over high heat, then reduce to medium-high heat and steam for 15 minutes. After turning off the heat, let it steam with residual heat for another 3 minutes.
- 18

Alright.
