Minced Meat Spicy Sauce
Ground pork simmers in oil with sweet bean paste, vinegar and crushed fresh chilies, creating a rich, glossy sauce that home cooks love to batch and jar.
Instructions
- 1

Half a day in advance, sort and wash the chili peppers, set them aside to let the water seep out, and let the moisture dry.
- 2
Use a grinder to crush the dried chilies (if you don't have one, you can also chop them with a knife).
- 3
Pour cooking oil into a wok and bring it to a boil. After a while, remove it from the heat and let the oil cool to around 70 degrees Celsius. First, pour the sweet bean paste into the oil, then immediately add the meat, followed by the vinegar. Next, place the wok on the heat (high heat) and stir a few times with a spoon. Then add the chili peppers and stir a few more times. After that, put in all the other seasonings at once, without following any particular order. Cook on high heat until the chili peppers are bubbling for 4 minutes (during this time, stir continuously with a spoon, otherwise it will burn), then reduce to medium-low heat for 8 minutes (also stirring continuously). Turn off the heat.
