Mini Cupcake
A homemade recipe for Mini Cupcake, combining egg, low-gluten flour and milk; baked until light, fluffy and golden. Follow the steps for the best results.
Instructions
- 1
Prepare everything in advance. Separate the egg yolks and whites, placing them in dry, oil-free containers. Use all ingredients at room temperature. Mix the granulated sugar and cornstarch evenly.
- 2
Heat the corn oil to around 65 degrees, using any heating method; it can be heated directly or using a double boiler.
- 3
Sift in the cake flour and mix evenly with the eggs using a 'Z' motion. Heat the milk and stir until well combined, then add the egg yolks and mix evenly using the same method.
- 4
I added a few drops of red velvet liquid, which can give the inside of the cupcake a light pink color. This step can be omitted, or you can add a few more drops if you prefer a stronger color.
- 5
Handle the egg whites by dripping in lemon juice. Add the mixture of fine sugar and cornstarch into the egg whites in three portions. Use an electric mixer to beat at high speed. During the final stage of whipping, you can switch to medium-low speed to avoid over-beating. When you lift the beaters, the egg whites should form small curved peaks, indicating that whipping is complete.
- 6
Take one-third of the meringue and add it to the egg yolk mixture, folding it in with a spatula using a cutting and folding motion until well combined, then pour it all back into the remaining meringue and fold it in using the same method, and transfer the mixture into a piping bag.
- 7
Line the cupcake molds with paper liners in advance, then pipe the cake batter into the liners, filling them about nine-tenths full.
- 8
Preheat the oven with the upper heat at 160°C and the lower heat at 150°C. Note: This mold is relatively large and is suitable for ovens with a capacity of 50 liters or more. The equipment used is the Peiyi K85 Pro, an 80-liter large-capacity convection oven all-in-one machine.
- 9
Medium, bake for 20 minutes.
- 10
Take the freshly baked cake out, give the baking tray a shake to release the steam, and place the small cakes right side up on a wire rack to cool.
- 11
The surface is smooth without collapsing or cracking, the inside is a light pink, and the warm winter sunlight makes the pink not too obvious ~ moderately sweet, very tasty ~
