Minnan salty rice
A southern Fujian one-pot rice cooked with pork belly, dried seafood, shiitake, carrot, and mustard greens, fried with shallot oil for a savory, layered flavor.
Instructions
- 1
Double-layer meat, skinned and diced; soak shiitake mushrooms, squid, or dried scallops in advance and cut into small pieces; cut carrots into thin strips; cut mustard greens into small pieces.
- 2
Sauté the shallots in oil over low heat for a moment, then remove the shallots. Leave the residual oil in the pan, and stir-fry the pork belly slices, dried seafood, shiitake mushrooms, and carrot strips evenly in order.
- 3
Add the washed rice and mustard greens, season with salt and light soy sauce, and stir-fry evenly.
- 4
Put it into the rice cooker, add the water used to soak the dried ingredients, then add an appropriate amount of boiling water, just enough to cover the ingredients or about an inch above them.
- 5
Set to normal rice cooking, and cook until done. Sprinkle the fried shallots over the rice and mix well; if you don't like the taste of shallots, you can skip this step.
