Minnan-style pickled radish
A beloved Minnan snack where radish planks are soaked to tame bitterness, then chilled in sweetened vinegar until translucent, icy, and squeaky between the teeth.
Instructions
- 1

One white radish, peeled.
- 2

Slice thinly and place in a container, add mineral water or cooled boiled water, add 3 tablespoons of salt, soak for 2 hours to draw out the bitter water.
- 3

Take it out and rinse with cold boiled water. Squeeze out the water.
- 4

Add white vinegar, granulated sugar, and salt, stir, and refrigerate overnight.
- 5

Sour, sweet, and crispy.
