Minnan-style Stir-fried Osmanthus Crab
Flaked crab meat scrambles with egg into golden, flower-like curds, a celebrated Minnan delicacy where sweet seafood and delicate egg mimic fragrant osmanthus blossoms in every luxurious bite.
Instructions
- 1

Blanch the fatty meat, cut into cubes, and place on a plate.
- 2

Pound the horse hooves once and then chop them.
- 3

Cut the white part of the scallions into sections and slice the water chestnuts, add diced fatty pork, then add salt, MSG, and pepper, and mix evenly first.
- 4

Add the shelled crab meat.
- 5

Add the duck eggs, note: duck eggs will be more fragrant.
- 6

Stir a bit to let the egg mixture blend into the ingredients.
- 7

Heat lard in a pan, and fry over low heat until both sides are golden brown.
- 8

Adding cilantro and Minnan sweet chili sauce makes it taste better.
