Mixed Pig Heart
A homey cold appetizer where tender poached pork heart is sliced thin and tossed with garlic, scallion, and chili rings for a savory, mildly spicy bite.
Instructions
- 1

Prepare a pig heart, cut it in half, and then soak it in water for more than half an hour.
- 2

Put the soaked pig heart into the pot, add scallions, ginger, and cooking wine, cover the pot, and blanch it.
- 3

After simmering the pig heart for ten minutes, add a spoonful of salt to enhance the base flavor.
- 4

After boiling the pig's heart for 10 to 20 minutes, take it out and cut it into thin slices for later use.
- 5

Prepare an appropriate amount of minced green onions, ginger, and garlic, along with slices of green and red peppers. Place them in a bowl and mix evenly for later use.
- 6

Heat oil in a pan, and after the oil is fully heated, pour it over the chopped green onions, ginger, garlic, and chili to release their aroma.
- 7

Then add two tablespoons of light soy sauce into the bowl. One and a half tablespoons of vinegar, a little oyster sauce, one tablespoon of Lao Gan Ma or chili oil, a little sesame oil, half a tablespoon of chicken essence, and an appropriate amount of salt, and mix well.
- 8

Evenly arrange the sliced pork heart on the plate, and pour the sauce we just prepared over it.
- 9

Sprinkle with chopped green onions and minced garlic.
