Morel Mushroom and Old Hen Soup
A slow double-boiled soup pairing earthy morel mushrooms with old hen and red dates, using the strained soaking liquid so the amber broth turns deeply savory and restorative.
Instructions
- 1
Clean morel mushrooms with warm water to remove dirt and grit, then soak in fresh water for half an hour and set aside.
- 2
Clean the auxiliary materials and set aside
- 3
Blanch the chicken and cool it down, then put it into the stew pot. Add the auxiliary ingredients (twist the red dates slightly) and morel mushrooms (after soaking the morel mushrooms, pour the water into the stew pot after the sediment has settled to remove the sand).
- 4
Place the stew pot into the steamer, with water covering one and a half times the height of the stew pot. Bring to a boil over high heat, then reduce to low heat and simmer for 2-3 hours (if the water in the steamer is insufficient, you can add boiling water, but do not add cold water).
- 5
Add an appropriate amount of salt for seasoning, cover with a lid, and it can be served after 15 minutes.
