Non-fried Potato Tower
Potatoes are accordion-cut into stretchy spring-like fans with the help of chopsticks, then roasted instead of deep-fried for a crisp golden exterior and tender, fluffy inside.
Instructions
- 1
Prepare three potatoes of similar size. Long, slender potatoes are very suitable for making potato towers. After peeling, cut off the sides, leaving only the central rectangle.
- 2
Place a rectangular potato between two chopsticks, first cut it vertically, about 2mm thick, then swap the head and tail and flip it over. Cut diagonally in the direction from the top left to the bottom right as shown in the middle picture, with the same thickness. After cutting, pull it apart and it becomes a potato spring.
- 3
Soak the potatoes that are not needed in cold water to prevent oxidation and discoloration.
- 4
Skewer the potatoes with bamboo sticks, gently stretch them, and place them in the air fryer.
- 5
Brush a thin layer of oil on the surface of the potato, set the temperature to 180 degrees, and cook for 20 minutes. Flip it two to three times during cooking. I use a Xianjin air fryer with a viewable basket, so I can observe the internal changes at any time. Flip it once the surface turns golden brown.
- 6
When the time is up, each side is golden brown, so it tastes very crispy.

Sprinkle barbecue seasoning on the surface, then squeeze on some ketchup and mayonnaise, and it's ready to eat~ By the time we were taking photos, the little ones were already drooling with hunger. They really couldn’t stop and ate more than two sticks, and I only got half a stick… My son said, 'Mom, let's go to the supermarket and buy some more potatoes tomorrow~' Uh, okay.
