Noodle sauce
Diced pork is browned with cooking wine, then simmered with soybean paste and plenty of scallions into a chunky, meaty sauce made for tossing through noodles.
Instructions
- 1

Wash the green onions and chop them finely.
- 2

Cut the pork into small cubes.
- 3

Pour 2 tablespoons of oil into a non-stick pan and heat it, then add the diced meat and stir-fry.
- 4

Add some cooking wine to remove the gamey smell of the meat.
- 5

Stir-fry until the diced meat turns white, then add half of the chopped green onions and stir-fry.
- 6

Stir-fry the diced meat until the surface is slightly charred, then add 6 tablespoons of soybean paste and continuously stir-fry over low heat.
- 7

Drizzle a little boiling water along the edge of the pan and stir-fry for 2 minutes, then add the remaining chopped green onions and stir a few times, and it's done.
