Old Vinegar Peanuts
Slow-fried peanuts keep a lasting crunch under a glossy aged-vinegar glaze sweetened with sugar and soy, sharpened by raw onion and fresh chili, the classic companion to a cold glass.
Instructions
- 1

Prepare the raw peanuts. Cut the onion into small pieces and the green and red chili peppers into pieces.
- 2

Pour peanuts into a cold pot with cold oil, turn on low heat and fry slowly until the peanuts crackle and change color, then remove and let them cool.
- 3

Pour a spoonful of soy sauce and two spoons of aged vinegar into the pot.
- 4

A spoonful of sugar, a spoonful of oyster sauce, heat it and keep stirring with a spoon until the sauce becomes thick.
- 5

Mix the peanuts with onions and chili peppers.
- 6

Pour the cooled sauce into a bowl and mix evenly. On hot summer days, it can be enjoyed with drinks or served to friends and family.
