Processed ingredients. Cut king oyster mushrooms and fish balls into large pieces.

  3. 3

First stir-fry the eggs and king oyster mushrooms, using the same amount of oil as you normally do for scrambled eggs. Don't add extra oil just because you'll be making fried rice later.

  4. 4

Stir-fry the king oyster mushrooms until they slightly change color, then add cold rice and stir-fry for ten seconds. At this time, the rice should look completely dry, with no oil at all.

Before the rice starts sticking to the bottom of the pan, add the remaining ingredients. Two tablespoons of olive vegetables contain a lot of olive oil, and the frozen corn will release water as it thaws in the pan. This provides enough oil and moisture, and if there's not enough liquid, you can add a bit of cooking wine or light soy sauce. The fish balls are already cooked, so you just need to stir-fry them with all the ingredients until heated through.

Stir-fry evenly, add salt to taste (since olive vegetables contain salt, taste first before adding more), sprinkle with green onions, turn off the heat, cover with a lid, and let it sit for two minutes.

    Let's start eating.
