3 egg whites, a few drops of lemon juice, beat them first until large bubbles appear, like fish eyes.

30 grams of white sugar, added in two portions while whipping.

Beat until lifting the beater forms small elastic peaks.

  14. 14
    Step image

    Continue folding and mixing evenly.

  15. 15
    Step image

Line a small round mold with parchment paper in advance. For a removable-bottom mold, wrap an additional layer of aluminum foil on the outside to prevent water from seeping in during baking.

  16. 16
    Step image

Pour the batter into the mold from a height.

  17. 17
    Step image

Use a bamboo skewer to make a few circles in the batter, then lift the mold and tap it twice to remove large air bubbles.

  18. 18
    Step image

Prepare a large baking tray, then pour in half of the cold water, place the mold in, and then put it into the oven.

  19. 19
    Step image

Preheat the oven to 150°C, bake for 60-70 minutes, and after the surface has browned, place a baking tray on the top rack to prevent the surface from burning too much.

  20. 20
    Step image

After baking, take it out and tap it twice to release the internal heat, then let it cool slightly before unmolding.
