Oreo Muffin Cake
A homemade recipe for Oreo Muffin Cake, combining low-gluten flour, milk and oreo cookie crumbs; baked until light, fluffy and golden. Easy to follow with simple step-by-step instructions.
Instructions
- 1
Crack the eggs into a bowl, add powdered sugar, milk, and corn oil, and mix thoroughly until well combined.
- 2
Sift in the cake flour and baking powder, and use a whisk to stir until smooth and uniform, with no dry flour or lumps, avoiding overmixing to prevent the batter from developing gluten.
- 3
Add crushed Oreo cookies (40 grams) and mix well.
- 4
The mixed cake batter can be placed into a piping bag, making it easier to fill the mold.
- 5
Add paper cups to the muffin pan. You can also use rigid paper cups, so there is no need for a pan. Squeeze the cake batter into the molds, filling them eight-tenths full, and prepare some large Oreo cookies to place on the surface.
- 6
Preheat the Gobike T42 oven, set the top and bottom heat to 175°C, place in the middle layer, and bake for about 25 minutes.
- 7
As the baking time increases, the cake gradually expands, and cracks appear on the surface.
- 8
Fresh out of the oven, it looks beautiful without needing heavy browning. It would look even better if decorated on the surface with small round Oreo cookies.
- 9
Break it open and look, the inside is full of air holes, the cake is very soft overall, filled with lots of Oreo cookie crumbs.
