Osmanthus Jam
Delicate osmanthus blossoms, hand-rubbed with layers of granulated sugar, gradually release their perfume and turn a deep amber, capturing autumn's fragrance in a jar.
Instructions
- 1

Add a little salt to the picked osmanthus flowers and wash them carefully.
- 2

Put it outside for a while to air it out and dry the surface moisture.
- 3

Add rock sugar or granulated sugar in about the same amount as the osmanthus, little by little.
- 4

Each time after adding, use your hands to knead the sugar and osmanthus together.
- 5

The kneaded osmanthus has lost some water, its volume has obviously decreased, and the color has turned into a somewhat ugly brown.
- 6

Add a pinch of salt and stir evenly.
- 7

Sterilize the glass bottle with boiling water, and after it has dried, pack the osmanthus flowers tightly inside.
- 8

Drizzle a layer of honey on top, seal it well, then set it aside and wait for a year~
