Osmanthus rice wine buns, with the fragrance of osmanthus, sweet rice wine, super soft and rich in flavor.
Osmanthus rice wine buns: high-gluten flour, milk powder and salt in a few quick steps, baked until golden and fragrant. Great for beginners and experienced home cooks alike.
Instructions
- 1

We put 240 grams of high-gluten flour, 25 grams of milk powder, 3 grams of salt, 3 grams of yeast, 30 grams of osmanthus sugar syrup, 100 grams of sweet fermented rice, and 30 grams of eggs together.
- 2

Then add the pre-made Polish starter. Method for making Polish starter: Mix 100 grams of bread flour, 100 grams of water, and 1 gram of yeast together until there is no dry flour. Let it ferment at around 25°C for 3-4 hours until it expands 3-4 times in size. The surface will have many small bubbles, the interior will have a network of air holes, and it will smell without any sourness—that means it is ready.
- 3

First, stir for about 7-10 minutes. After forming a coarse film, add 25 grams of unsalted butter softened to room temperature and mix until evenly combined, then continue stirring.
- 4

After stirring for about another 12-15 minutes, you should be able to knead out a thin glove-like membrane.
- 5

Take out the dough and divide it evenly into 12 portions.
- 6

Roll everything into balls and cover with plastic wrap to rest for 5 minutes.
- 7

Take a well-rested dough and first flatten it.
- 8

Then fold from the outside to the inside.
- 9

Finally, pinch it closed.
- 10

Just roll it into a ball.
- 11

Arrange on a baking tray and place in the oven for the second fermentation. Oven temperature 35℃, humidity 80%, ferment until 1.5 times larger (Note: put a bowl of hot water in the oven to help fermentation).
- 12

First, take out the fermented bread, brush a layer of egg wash on the surface, and then put it into the preheated oven.
- 13

Preheat the oven to 170°C, then put in the bread and bake for about 17-20 minutes (during baking, if the surface starts to brown, cover it with a sheet of aluminum foil to prevent it from getting too dark).
- 14

While still hot, brush a layer of honey water (mix honey and water in a 1:1 ratio).
- 15
