Pan-fried buns with pork and yardlong beans filling
Northeast-style pan-fried buns packed with juicy pork and rehydrated string beans, the filling whipped with Sichuan peppercorn water for a savory, blistered golden bottom.
Instructions
- 1

Dry oil beans from the Northeast, set aside.
- 2

Soak overnight, then drain the water.
- 3

Choose good scallions, wash them clean, and set aside.
- 4

Squeeze out the excess water from the yardlong beans and grind them together with the green onions using a meat grinder.
- 5

Set aside the minced pork.
- 6

Let the cooled Sichuan pepper water be added in three portions, stirring clockwise.
- 7

Until the filling becomes thick and elastic, add a little peanut oil, light soy sauce, and dark soy sauce, and mix well.
- 8

Continue adding an appropriate amount of salt and a little chicken bouillon for seasoning, then mix well.
- 9

Add a little yeast, sugar, and warm water to the flour, stir into a flaky mixture, let it rise until it doubles in size, and knead into a smooth dough.
- 10

Roll into long strips and cut into evenly sized pieces.
- 11

Roll out the bun dough into thin wrappers.
- 12

Wrap the filling.
- 13

Already wrapped.
- 14

Heat a skillet, add a little oil, and arrange it.
- 15

Pour in enough water to cover half of the buns, as shown in the picture.
- 16

Fry over medium-low heat until there is no water in the pan.
- 17

Flip it over and fry until golden brown.
- 18

Take it out of the pot and serve it on a plate.
