Pan-fried dumplings
Pan-fried dumplings packed with a rustic filling of pork, chives, glass noodles, and wood ear mushrooms seasoned with fermented bean paste, crisp-bottomed and juicy.
Instructions
- 1

Pick the chives, wash them clean, and let them dry.
- 2

Soak the vermicelli in boiling water until soft, then drain the water using a strainer.
- 3

Put the wood ear mushrooms into a basin, sprinkle with flour, and pour in warm water to soak.
- 4

After a few minutes, the wood ear mushrooms softened, and were rinsed clean under tap water.
- 5

The pork belly bought at the supermarket was ground by the seller, then marinated with scallions, ginger, five-spice powder, and light soy sauce for 1 hour. It was stir-fried in an oil pan until the oil came out, then 1 spoonful of doubanjiang was added and fried until fragrant.
- 6

Remove the stems from the wood ear mushrooms and chop them, trim a little of the roots from the chives and chop them, cut the vermicelli into small pieces, put the cooled minced meat into a bowl, pour in 1 tablespoon of peanut oil, add an appropriate amount of five-spice powder, and sprinkle in half a teaspoon of salt when starting to wrap.
- 7

Pour 500 grams of flour into a bowl, add warm water while stirring to form a crumbly mixture, then knead by hand into a smooth dough. Cover with a lid and let it rest for 20 minutes. After resting, knead the dough on a work surface until smooth, roll it into a long strip, cut into evenly sized pieces, flatten each piece, roll it into a thin wrapper, and fill with the filling.
- 8

Dumplings for pan-frying are smaller than buns but larger than the usual dumplings.
- 9

Spread a layer of oil in the frying pan, and when the oil is half hot, put in the dumplings and fry over medium heat until the bottoms turn yellow.
- 10

Pour a bowl of water along the edge of the pan until it reaches one-third of the height of the fried dumplings. Cover the pan with a lid and cook on high heat until there is no water left in the pan and a sizzling sound is heard. The fried dumplings are then ready.
- 11

Since it is pre-cooked minced meat, it takes about five minutes to use. Once the dough is cooked, the pan-fried dumplings are ready.
- 12

Making pan-fried dumplings at home by yourself allows your family to eat with peace of mind and confidence, and whether at work or studying, you can be full of energy all day!
