Pandan Powder Cake
Pandan Powder Cake made with low-gluten flour, egg and white sugar, baked until light, fluffy and golden. A great choice for family gatherings or a weekend treat.
Instructions
- 1

Ingredients: eggs, pandan powder, white sugar, flaxseed oil, salt, low-gluten flour.
- 2

Separate the egg white and the yolk, and put them in two different bowls.
- 3

Add sugar to the egg yolks and mix evenly with a hand whisk.
- 4

Add water and flaxseed oil, and mix well.
- 5

Add the sifted cake flour and pandan powder.
- 6

Mix well and set aside.
- 7

Add sugar, salt, and white vinegar to the egg white.
- 8

Beat with an electric mixer until soft peaks form.
- 9

Pour one-third of the egg yolk mixture into the egg whites, and mix with a manual whisk.
- 10

Then pour all of the egg yolk mixture into the egg whites and gently fold until well combined.
- 11

Preheat the oven, set the top heat to 140°C and the bottom heat to 140°C. Pour the batter into an 11-inch non-stick baking pan. Tap it a few times on the table to remove air bubbles and smooth the surface. Put it into the oven and bake at 140°C for both top and bottom heat for 20 minutes. Then set the top heat to 150°C and the bottom heat to 140°C, and bake for another 15 minutes. The cake surface should be slightly yellow. Insert a toothpick into it; if no wet batter comes out, it is ready to be taken out of the oven.

The aroma of pandan powder is overwhelming, and the egg fragrance of the cake itself makes me feel that life is so beautiful; the cake is so delicious.
