Pea Glutinous Rice
A Sichuan one-pot sticky rice where fresh peas simmer with lard-rendered pork and cured bacon, then soaked glutinous rice steams on top, drinking up the savory, peppery broth.
Instructions
- 1

Wash the peas.
- 2

Wash the glutinous rice with clean water, then soak it in boiling water for more than an hour.
- 3

Prepare an appropriate amount of fresh pork and cured meat, half of each, and cut them into small slices or small pieces.
- 4

Place the fatty pork (cured fatty meat) into a cold pan, render out the fat, then add the lean meat and an appropriate amount of Sichuan peppercorns to stir-fry.
- 5

Pour in the peas and stir-fry together, then add salt.
- 6

Add water and bring to a boil.
- 7

(After cooking the peas until soft) evenly spread the rice soaked in boiling water and alcohol over the peas and diced meat.
- 8

If there is little water, add boiling water to cover the rice wine rice, then cover the pot and simmer the rice.
- 9

Simmer for about 30 minutes or more, the time depends on the amount of water. Once the rice is cooked, you can mix the peas with the rice and start eating.
