Pea jelly
Silky pea starch jelly set until firm, then cut into strips and dressed cold, offering a bouncy, cooling texture with a clean, mellow flavor.
Instructions
- 1

Prepare a bowl of pea powder.
- 2

Add a bowl of water and mix evenly, stirring until there is no dry powder.
- 3

Place the pot on the stove and heat the water. Add 6 bowls of water to the pot and bring it to a boil over high heat.
- 4

After the water boils, slowly pour in the prepared pea starch water, stirring continuously to prevent it from sticking to the bottom.
- 5

Keep stirring.
- 6

It will be fine once small bubbles start appearing.
- 7

Pour into the mold and let it cool at room temperature for more than 2 hours.
- 8

After cooling, turn it upside down, and cut it into small cubes.
- 9

Soak it in ice water for a while.
- 10

Spoon into a bowl and add honey before eating.
- 11

Ice-cold, not bad!
