Pea jelly noodles
Smooth pea-starch jelly cooled at room temperature, sliced into noodles and served chilled, prized for its slippery, springy bite and neutral flavor.
Instructions
- 1

Prepare a bowl of pea powder.
- 2

Add a bowl of water, stir evenly until there is no dry flour, and adjust into a batter.
- 3

Put the pot on the stove, add 6 bowls of cold water, and bring to a boil over high heat.
- 4

After the water boils, slowly add the prepared batter, stirring continuously to prevent it from sticking to the bottom.
- 5

Keep stirring to prevent it from burning at the bottom.
- 6

Bring to a boil.
- 7

Pour into a large bowl and let it cool at room temperature (do not put it in the fridge, as refrigeration will reverse the process).
- 8

In a few hours, the cold noodles will be ready.
- 9

Turn it upside down to take it out.
- 10

Scrape it off by rotating with a spatula.
- 11

The pea vermicelli is ready.
- 12

Put it into the bowl.
- 13

Add shredded cucumber, shredded ham, and cooked peanuts.
- 14

Take another bowl, add crushed garlic, chili powder, white sesame, and chopped green onions.
- 15

Add salt, oyster sauce, and light soy sauce, then pour hot oil over it.
- 16

Stir evenly, add chicken essence, sesame oil, and vinegar for seasoning, and stir evenly again.
- 17

Spoon over the pea starch noodles.
- 18

Just stir until evenly mixed.
- 19

Let's start eating.
