Pea Shoot, Silver Mushroom, and Egg Soup
A light, quick soup pairing tender pea shoots and silver mushrooms with softly poached duck eggs in a clear broth, keeping the greens vivid and the flavors clean.
Instructions
- 1

Wash the pea shoots and silver mushrooms and set aside.
- 2

Boil the water and crack a duck egg into it. Once one side of the duck egg solidifies, gently flip it to cook the other side until solid, then take it out. Do the second one the same way as the first one (the duck egg is not directly cracked into the pea shoots, because cracking the egg in will create a lot of foam, so I did them separately).
- 3

Add an appropriate amount of water, put in the prepared duck eggs, and bring to a boil. Then add the pea shoots and enoki mushrooms and cook for 1 minute. Pea shoots and enoki mushrooms cook very easily. Add an appropriate amount of salt and a small amount of chicken essence, and it’s ready to eat.
