Peach Resin and White Fungus Sweet Soup
A soothing Chinese dessert soup of peach resin and white fungus, both soaked overnight, then slowly stewed with rock sugar and dried rose petals into a glossy, gelatinous tonic.
Instructions
- 1

Ingredients: 20g peach gum, a small piece of white fungus, a small handful of rose raisins, a little rock sugar.
- 2

Peach gum is a resin secreted from the bark of Rosaceae plants such as peach or wild peach trees, so we need to treat it beforehand. It needs to be soaked for more than 8 hours. Mine was soaked overnight, and it looks like it has expanded a lot.

Tremella should also be torn into small pieces for soaking; the smaller the pieces, the easier it is to release the gelatinous substance.
- 4

I stewed it using the Joyoung Peach Blossom Stew Pot, and then added enough water at once, just make sure not to exceed the maximum water level.
- 5

Place the prepared ingredients into the stewing pot one by one.
- 6

Then add enough water, cover it with a lid and place it in the stew pot, and put on the outer lid.
- 7

You can choose either the peach gum or bird's nest function. I chose the peach gum function. The time can be adjusted according to your taste. The default is one hour, but if you want it softer and more tender, one and a half hours is also fine.

Remove from the pot and add a little rock sugar.
