Peanut cake
Golden fried peanut fritters with a thin, crisp shell and a nutty, chewy center, made from a rice-flour batter dotted with whole peanuts.
Instructions
- 1

Soak the peanuts for 10 minutes in advance.
- 2

Prepare glutinous rice flour (you can also soak rice overnight and grind it into rice milk as a substitute) and wheat flour (the ratio of glutinous rice flour to wheat flour is 2:8).
- 3

Add cold water.
- 4

Stir evenly to form a relatively thin batter (it must not be too thick; if it is too thick, the finished product will turn out hard).
- 5

Add salt, white sesame, and five-spice powder, and stir evenly.
- 6

Add soybean powder and stir evenly (adding a little soybean powder makes the fried product crispier, but it can be omitted if not available).
- 7

Add chopped green onions and mix evenly.
- 8

Drain the water from the peanuts (soak for only 10 minutes, do not soak for too long).
- 9

Pour the peanuts into the rice slurry, stir evenly, and the batter water is ready.
- 10

Heat the oil in the pan, and put the mold into the oil together to heat, making it easier to demold.
- 11

When the oil is 50% hot, take out the mold and spoon in half a spoon of peanut batter water (using a little less batter water will make the fried cakes thinner).
- 12

Put it into the oil pan and fry for two minutes, then it will float up on its own and come out of the mold (use medium-low heat throughout).
- 13

Keep flipping it over, and fry until both sides are golden, then remove it.
- 14

Alright, drain the oil and fry them all one by one.
