Pepper Pork Tripe Soup
A warming Cantonese-style soup of pork tripe scrubbed clean with flour, vinegar, and liquor, then simmered with crushed white pepper and ginger until tender and fragrant.
Instructions
- 1

Rub the pig stomach inside and out with either cornstarch or glutinous rice flour (either one is fine), white wine, and white vinegar. After 15 minutes, rub it for another 3 minutes, then tear off any excess fat inside the stomach and rinse it clean.
- 2

Put the cleaned pig stomach into a pot, add some white wine and boil it briefly to remove the odor. At this time, prepare crushed pepper and ginger (the photo of the ginger wasn't taken).
- 3

Pick up the pig stomach and wash it clean with cold water, then cut it into strips and set aside.
- 4

Add an appropriate amount of water, put the pig stomach, pepper, and ginger into the pot with cold water, cover the pot, and once the water boils, cook for another 2 minutes and it's ready.
