Pickled Chinese toon
Briefly blanched toon shoots are rubbed with salt and frozen in sealed bags, locking in their prized spring aroma for enjoyment throughout the year.
Instructions
- 1
Wash the Chinese toon
- 2
Blanch in boiling water, and cook gently for a minute or two. If cooked too long, the color will no longer be bright green. This time I cooked it a bit too long.
- 3
Take it out and let it cool in cold water

Drain the water, rub salt on each piece, and gently knead to help the salt dissolve more fully. Place in a sealed freezer bag and freeze. Take out as needed for consumption.
