Pickled garlic scapes
Salt-cured scapes take a quick dip in a cooled syrup of rock sugar, soy, vinegar, and whole spices, becoming ready to nibble as soon as tomorrow.
Instructions
- 1

Wash the garlic scapes and drain the water, cut them, and marinate with salt for two hours. Fold them; they should be resilient and not break.
- 2

Prepare the ingredients: a handful of rock sugar, half a bowl of light soy sauce, a bowl of aged vinegar, bay leaves, Sichuan peppercorns, and star anise.
- 3

Simmer all the ingredients into a sauce, add a little white vinegar, and let it cool for later use.
- 4

Put it in a bottle that is free of water and oil.
- 5

Pour in a small amount of white wine.
- 6

Seal it properly, and it can be eaten the next day.
- 7

The next day it was pickled.
