Pickled Green Radish
Green radish slices, salt-cured until crisp-tender, steep in a savory blend of soy, sugar, chili and Sichuan pepper for a punchy pickled snack that keeps for days.
Instructions
- 1

Wash the green radish, slice it, and put it into a large oil-free bowl.
- 2

Add 15 grams of salt, marinate for 2 hours, and use your hands to squeeze out the water released from the radish.
- 3

Put the ginger, garlic, chili, and 15 grams of salt into a bowl and mix well.
- 4

Add light soy sauce, dark soy sauce, and white sugar, and mix well.
- 5

Rinse the Sichuan pepper with water, leave a little water, wait for 5 minutes, and let it absorb some moisture.
- 6

Add cold oil to the pan, put in the soaked Sichuan peppercorns, and fry on low heat until fragrant.
- 7

Pour it into the prepared radish while it's hot, mix it up, and it can be eaten after 2 hours!
