Pickled Lettuce with Sauce
Celtuce segments are first salted until pliable, air-dried, then bathed in sweet bean sauce for a tangy, earthy jarred vegetable with a pleasantly crunchy texture.
Instructions
- 1
Peel the lettuce, cut it into large sections or rough chunks, place them in a small bowl, and sprinkle with refined salt to marinate for 2 hours.
- 2

After marinating for 2 hours, the lettuce will release some water.
- 3

Lettuce is ready once it has been pickled and softened.
- 4

Place the pickled lettuce in a ventilated area to air dry. You can also soak it in clean water for a while to remove some of the salt, so the pickles prepared this way will have a sweet and sour taste.
- 5

Place the dried lettuce in a small bowl or earthenware jar used for pickles, pour in sweet bean sauce, and add a little sugar.
- 6

Turn the lettuce over so that the sweet bean paste covers the lettuce. Turn it once a day, and it will be ready in 7 days.
- 7
Lettuce that has been marinated can be eaten after being shredded or sliced.
