Pickled Mustard and Dried Radish Steamed Twisted Bun (Single Fermentation)
Savory steamed twisted rolls swirled with pickled mustard tuber, dried radish, and thirteen-spice in a single-fermentation dough, fluffy with zingy layers.
Instructions
- 1

Dissolve the yeast in warm water, mix it with the flour, and knead into a smooth dough.
- 2

No need to ferment, just roll the dough into a large long sheet, brush a layer of vegetable oil, and sprinkle with thirteen spices, pickled mustard, and dried radish.
- 3

Roll it up and cut it into small sections.
- 4

Stack the two pieces together and press them all the way down in the middle with chopsticks.
- 5

Fold the left and right sides down and bring them together.
- 6

Put into a square mold and let it ferment until it doubles in size.
- 7

Place in the steamer, bring the water to a boil over high heat, steam over medium heat for 25 minutes, turn off the heat, and let it sit for 3-5 minutes before opening the lid.
- 8

Remove from the pot, take out of the mold.
- 9

Fluffy and soft, three-dimensional and aesthetically pleasing.
