Pickled sour long beans
Sun-dried beans and garlic settle into a dry salt-sugar pack inside a sterile jar, relying on patience rather than brine for clean, natural sourness.
Instructions
- 1

Fresh green beans, wash them clean, pick out any with worm holes or that are bad, and place them in a cool spot on the balcony to dry off the moisture. This step is crucial, as having water makes them spoil easily during the pickling process.
- 2

After draining the water, cut into small sections or cubes, as you like, and chop a few cloves of garlic.
- 3

Take a glass bottle, it must be clean, free of oil and water, put the green beans and garlic inside, and add salt and sugar.
- 4

Cover with the lid, shake a few more times to help the salt and sugar dissolve faster, then store in a cool place for 5 days (5 days in summer, 7 days in winter).
- 5

Pickled green beans will turn yellow.
