Pickles made from watermelon rind
Summer's leftover rind gets peeled, salted, squeezed, and simmered into a savory soy-garlic sauce, a resourceful way of turning kitchen scraps into something genuinely tasty.
Instructions
- 1

Slice the watermelon rind and remove the excess watermelon flesh and outer skin.
- 2

Place the green rind of the watermelon into a bowl and add an appropriate amount of salt, then marinate for three hours.
- 3

Pour all the liquids from the sauce ingredients into a pot, then add two items, bring to a boil over heat and then remove from the heat. Cut the garlic cloves in half and add them to the sauce, then let it cool and set aside.
- 4

Filter out the liquid from the pickled watermelon rind, then use your hands to squeeze out the excess liquid, and then place it into a sterilized container.
- 5

Then pour in the cooled sauce, seal it, and refrigerate to marinate overnight.
