Pickling of garlic in sugar
Whole fresh garlic bulbs are soaked to tame their sharpness, then covered with a cooled syrup of sugar, vinegar, and water for a classic sweet-tangy preserve.
Instructions
- 1

Peel the old skin off the fresh garlic,
- 2

1050 grams of white sugar, set aside.
- 3

600 grams of vinegar, set aside.
- 4

600 grams of clean water, set aside.
- 5

Place the pot on the stove, add water, sugar, vinegar, and a little salt, and bring it to a boil to make sweet and sour sauce.
- 6

Let it cool and set aside.
- 7

Place in clean water and soak for 24 hours, changing the water every 5 to 6 hours to reduce the spicy taste, then remove and drain the water.
- 8

Hang to dry for later use.
- 9

Put the garlic into the sweet and sour sauce pot.
- 10

Find a clean, oil-free jar, put the drained garlic into the jar, and pour in the prepared sauce; the sauce should cover the garlic. Cover the jar for storage, no need to seal it tightly. At the beginning, the garlic on the top will float, and during the first few days of pickling, stir it once a day to ensure even pickling.
