Instructions

    The main dough ingredients and the Polish starter dough are ready; the dough in the blue-rimmed bowl is the Polish starter, which needs to be made several hours in advance. It can ferment at room temperature or in the refrigerator, and the dough can be used when it has nearly tripled in size.

  2. 2
    Step image

    Put all ingredients except butter and salt into the kneading bucket;

  3. 3
    Step image

    First, mix at low speed until it forms a dough, then switch to high speed. When the dough can stretch into a rough membrane, add softened butter and salt;

  4. 4
    Step image

    First, beat at a low speed to fully incorporate the butter into the dough, then switch to high speed for beating. The dough should not stick to the bowl or hands and should be able to stretch into an elastic film; because of the addition of dark whole wheat, it is difficult to reach the perfect stage.

  5. 5
    Step image

    Shape the dough into a ball, place it in a large bowl, cover with plastic wrap, and ferment at a base temperature of 28°C.

  6. 6
    Step image

    Let it rise to double its size, then dip your fingers in flour and poke holes on top; it should neither collapse nor shrink back.

  7. 7
    Step image

    Place the dough on the workbench, gently pat to release the air, weigh and divide into 6 equal portions, shape each into a ball, and let rest for about 15 minutes;

  8. 8
    Step image

    Roll into an oval shape, roll up, and let rest for about 20 minutes;

  9. 9
    Step image

    Gently press the dough roll flat, with the smooth side facing up, roll it into a long strip about 40 cm in length, then flip it over and roll it a couple of times.

  10. 10
    Step image

    Roll from top to bottom into a roll, place in a 450g toast box, undergo secondary fermentation at a temperature of 35°C and humidity of 80%.

  11. 11
    Step image

    When filled to 80-90%, preheat the oven to 180 degrees; the surface can be brushed with egg wash or not.

  12. 12
    Step image

    Place in the preheated oven on the lower rack, 180°C, for 35 minutes. Once the surface has browned to your liking, cover with aluminum foil; after taking it out of the oven, tap a few times to release from the mold, let it cool, and then store in a bag.
