Pork and loofah soup noodles
Softened rice noodles simmer in a light broth with tender loofah strips, velvety pork slices, and a golden fried egg for a soothing, mildly sweet Southern-style noodle soup.
Instructions
- 1

Prepare the dry rice noodles, bring water to a boil in a pot, add the rice noodles after the water boils, cook until done, cover the pot, and let them steam for 20 minutes.
- 2

Rinse with cold water and clean thoroughly (wash several times).
- 3

Cut the pork and loofah into small strips.
- 4

Heat oil in a pan over low heat, and fry the eggs into sunny-side-up eggs.
- 5

Push to one side, then add the loofah strips and stir-fry until just cooked.
- 6

Add slightly wider pieces and bring to a boil over high heat.
- 7

Mix the pork with a little starch until evenly coated.
- 8

Put the pork into the pot and cook for a little while.
- 9
