Pork Bone, Chinese Yam, and Corn Soup
A classic bone soup: blanched pork bones simmer long with ginger and goji, then Chinese yam and corn join near the end, giving a sweet, starchy-thick, nourishing broth.
Instructions
- 1

Prepare fresh pork bones.
- 2

Blanch the bones in boiling water.
- 3

Rinse the blanched bones clean with cold water. Add fresh water to a pot. Put the washed bones into the pot. Add scallions, ginger, and goji berries, and start simmering over high heat. Once it boils, reduce to low heat and continue simmering.
- 4

Simmer over low heat for about forty minutes. Add the Chinese yam when the bones are nearly cooked. Cook the corn for twenty minutes.
- 5

It's done cooking.
