Pork Kidney Eucommia Soup

Pork Kidney Eucommia Soup

A traditional tonic soup simmering pork ribs with soaked white beans and eucommia bark, believed to strengthen the back and kidneys.

Instructions

  1. 1
    Step image

Grab two to three handfuls of white beans (dry white beans) in a bowl and soak them in water until they become wet beans

  2. 2
    Step image

Eucommia (available at pharmacies), cut out two or three pieces and wash them, then soak in water the same way (soak for about half an hour, and later add both the pieces and the soaked water into the pot),

  3. 3
    Step image

Blanch the ribs briefly to remove the blood, then pour in clean water along with the prepared Eucommia (add it to the pot with the water). Add the white beans to the pot and cook over high heat, then reduce to medium heat and simmer for half an hour (I use a pressure cooker, but a stew pot works too; of course, the cooking time can be a bit longer).

  4. 4
    Step image

After what's in the pot is cooked, finally add the pig kidneys, and cook together for another 5 minutes. Add some seasoning, and you're done!

  5. 5
    Step image

Okay, it's done and ready to serve.
