Pork Liver Soup (How to Remove the Gamey Taste of Pork Liver)
Pork liver is soaked and salt-rubbed to purge blood and gaminess, blanched, then paired with tomato for a clean, slightly tangy, tender soup.
Instructions
- 1

First, soak the pork liver in water for 1 hour, then change the water and add cooking wine, soaking for another half hour. Cut it into thin slices, rub it repeatedly with salt to remove all the blood and impurities inside, until the water is clear! Finally, drain the water and set it aside! (Doing this will effectively remove the gamy smell).
- 2

Cut the tomatoes into pieces, tear the leaves into small pieces, slice the green onions into shreds, and slice the ginger! Set aside!
- 3

Add water to the pot and blanch the pork liver with some remaining cooking wine. Once the pork liver changes color, you can take it out and rinse it clean in cold water!
- 4

Add oil to the pot, and when the oil is hot, add ginger and scallions to sauté until fragrant. Add an appropriate amount of water and bring to a boil, then add pork liver, tomatoes, and leaves! Once it boils again, add salt to taste and it's ready!
