Pork Rib, Lotus Root, and Carrot Soup

Pork Rib, Lotus Root, and Carrot Soup

A rustic clay-pot soup of pork ribs, crinkly lotus root chunks, and carrot, simmered forty minutes until the roots turn starchy-sweet and the broth deeply savory.

Instructions

  1. 1

Blanch the ribs and rinse them with water. Cut the carrot and lotus root into large chunks.

  2. 2

Add water, green onions, and ginger to the pot, then add the ribs with a little cooking wine. Goji berries and pepper can be added as desired.

  3. 3

After the clay pot comes to a boil, you can add the lotus root and carrots. Adding them early allows them to absorb the flavor.

  4. 4

Simmer for forty minutes, then add salt and chicken bouillon, turn off the heat and add cilantro and sesame oil. Serve.
