Pork, shrimp, and chive dumplings
Classic juicy dumplings combining minced pork and sweet diced shrimp with fragrant garlic chives, wrapped in hand-kneaded dough for a springy, deeply savory filling.
Instructions
- 1
Mix the flour and water, knead into a relatively smooth dough; the dough is rough at first, cover it and let it rest for 15 minutes, then knead again until smooth and soft;
- 2
Prepare the minced meat, and clean the chives and large shrimp.
- 3
Peel the shrimp, remove the vein, cut into small pieces, place them in a bowl with the ground meat, add salt, light soy sauce, and a little cold water, and mix evenly.
- 4
Chop the chives finely and mix them evenly with the shrimp and meat filling.
- 5
Place the rested dough on a floured workbench, roll it into a long strip, cut it into evenly sized portions, and roll each portion into a round wrapper that is slightly thicker in the center and thinner at the edges.
- 6
Place an appropriate amount of filling on the round wrapper;
- 7
Shape it into dumplings by your own method, either by wrapping or pressing.
- 8
After wrapping them, bring water to a boil, put the dumplings into the pot, and cook until they are all plump and floating on the surface, then they are ready to eat.
