Pork Trotter and Spare Rib Corn Soup
A collagen-rich soup of pork trotters and spare ribs slow-stewed in a clay pot with wine until tender, joined by fruit corn for natural sweetness, finished with pepper and herbs.
Instructions
- 1
After cleaning the pig's trotters and ribs, blanch them in water and rinse off the scum with warm water.
- 2
Place the chopped green onions and sliced ginger at the bottom of the clay pot, and add yellow wine.
- 3
Add pork trotters and ribs, then add water
- 4
Bring to a boil over high heat, then reduce to low heat and simmer slowly
- 5
Cut the sweet corn into small sections, and add it after the pig's feet and pork ribs are simmered until 80% cooked, then continue to cook together until fully done.
- 6
When serving, add an appropriate amount of salt and white pepper, then sprinkle with chopped green garlic and chopped cilantro.
