Potato and Black Rice Stewed Rice
A hearty stewed rice of black rice, potato, shiitake, peas, and pork belly, fried and simmered together for a savory, chewy, deeply comforting bowl.
Instructions
- 1

Clean the dried shiitake mushrooms and soak them in water.
- 2

Peel and wash the small potatoes; cut the large ones in half, and leave the small ones whole. Finely chop the shallots.
- 3

Wash the peas.
- 4

Cut the carrot into small pieces.
- 5

Cut the pork into small pieces and fry them over low heat in a pan until the oil is released.
- 6

First, add the carrots and potatoes and stir-fry for a while.
- 7

Then add the peas and shiitake mushrooms, and stir-fry evenly with salt, cooking wine, and light soy sauce.
- 8

An appropriate amount of soaked black rice.
- 9

Put the stir-fried vegetables and black rice into the rice cooker, add water until it is level with the ingredients (also pour in the water used to soak the mushrooms). The black rice has been soaked in advance, so not much water is needed. Press the cook button.
- 10

After the rice is cooked, mix it evenly from top to bottom.
- 11

It's so delicious that eating one bowl still doesn't satisfy my craving.
