  3. 3
    Step image

Put mashed potatoes, eggs, yeast powder, fine sugar, milk powder, and salt into a dough bowl, and add water.

  4. 4
    Step image

Add half of the bread flour.

  5. 5
    Step image

Stir into a paste and let it sit for 5 minutes.

  6. 6
    Step image

Then add the other half of the bread flour.

  7. 7
    Step image

Knead into a dough with a slightly soft texture.

  8. 8
    Step image

    Add the softened butter.

  9. 9
    Step image

Continue kneading the dough until you can stretch out small thin sheets.

  10. 10
    Step image

Cover the dough and let it ferment in a warm place.

  11. 11
    Step image

Put raw egg yolk, whole milk, fine granulated sugar, and 15 grams of high-gluten flour into a small pot.

  12. 12
    Step image

Heat over low heat, stirring while cooking, until it becomes a paste.

  13. 13
    Step image

    Put into a piping bag.

  14. 14
    Step image

Let it cool and set aside.

  15. 15

Sprinkle a little dry flour on the cutting board, when the dough has risen to twice its size, take it out and knead out the air.

  16. 16
    Step image

Divide evenly into 9 parts. You can use a kitchen scale here to calibrate, trying to make them as uniform in size as possible.

  17. 17
    Step image

    Collect separately and round.

  18. 18
    Step image

Spread a layer of solid butter in a square baking pan and place the dough in it.

  19. 19
    Step image

Place in a warm area for the second fermentation, about 40 minutes.

  20. 20
    Step image

    Pipe on the decorative frosting.

  21. 21
    Step image

Preheat the oven to 180 degrees.

  22. 22
    Step image

Middle layer, top and bottom heat, bake for about 20 minutes.

  23. 23
    Step image

    Take out and let cool.

  24. 24
    Step image

Adding mashed potatoes makes the bread texture softer.

  25. 25
    Step image

Left at room temperature overnight, it still tastes great.
