Pounded Chili with Century Egg
Green chilies are pan-fried until blistered, torn into strips and mashed with silky century egg under a tangy garlic dressing, a rustic Hunan-style favorite.
Instructions
- 1
Prepare the main ingredients.
- 2
Chop the garlic, and peel the century egg for later use.
- 3
Add a small amount of oil to the pan, and put the green chili peppers in to fry over low heat.
- 4
Pan-fry until the chili peppers become soft and take on a tiger-skin appearance, then turn off the heat.
- 5
After the chili has cooled, tear it into strips and put it together with the century egg.
- 6
Prepare the sauce: Put minced garlic into a bowl and add 20 ml of fragrant rice vinegar, 15 ml of premium light soy sauce, 10 g of rich oyster sauce, 0.5 g of salt, 3 g of white sugar, and 5 g of sesame oil, then mix evenly.
- 7
Mash the chili and preserved egg, pour in the seasoning sauce, and stir to mix.
- 8
The New Year's appetizer of pounded chili with century egg has been completed.
- 9
Fresh and spicy, appetizing, helps cut the greasiness and goes well with rice, making the reunion meal flavorful, richer, and warmer.
