Prawns in sauce
Peeled prawns are cooked, cooled and left to soak in a tangy broth of lemon, onion, chili and garlic until every bite turns bright and refreshingly piquant.
Instructions
- 1

Slice the lemon, shred the onion, cut the bird's eye chili and cilantro into small pieces, peel and chop the garlic cloves, and slice the ginger for later use.
- 2

Put the onion, cilantro, chili, and minced garlic into a bowl, then add salt, light soy sauce, oyster sauce, and aged vinegar.
- 3

Pour in an appropriate amount of cooled boiled water and stir evenly, set aside.
- 4

Remove the heads of the shrimp, butterfly them, and remove the veins. Add water to a pot, put in ginger slices, and bring to a boil. Then cook the shrimp until done and remove them.
- 5

Peel the cooked shrimp after rinsing them in cold water, and add lemon slices.
- 6

Pour in the sauce and refrigerate for 1 hour.
- 7

The sauced sea shrimp is done.
